I put the convEGGtor in, legs up, followed by a rack and a pizza stone. The biggest mistake folks make when making pizzas on the egg is not shooting (taking the temp) of the stone. That’s the most important thing. In my traditional wood-fired pizza ovens I cook at about 850-900°. Now the Egg can get to 700° but you need to make sure the vents are all the way open and you have air flow. I highly recommend before you try this, clean out the egg and ensure all ash is removed. To launch the pizza, simply place the top of the paddle tip on the stone and jerk the pizza from the launcher to the stone in one quick motion. This will take practice. But you got this! I used a boneless ribeye roast, smoked it on the @biggreenegg over my Dutch oven filled with onions, mushrooms, butter, stock, and fresh herbs. When it hit 120 internal, remove everything from the grill and let it rest. For the bread I used @turanobread French rolls and provolone cheese. Dry Rub: – 100 g light brown sugar – 30 g smoked paprika -30g garlic powder – 30g onion powder – 5 g ground cumin – 5 g ground coriander – 30g salt – 30g corse ground black pepper -2g dried oregano -4g dried basil -1g ground cinnamon Instructions: -In a small bowl, combine all dry rub ingredients. Wrap and place back on the smoker for another hour until the internal temperature of 90° has been reached, then rest for one hour. -In a small saucepan, combine the barbecue sauce & other ingredients.
