Ingredients You’ll Need to Create These Chocolate Cookie Muffins

Gather these simple yet effective ingredients to create your batch of delightful chocolate cookie crumble muffins. Each ingredient plays a crucial role in achieving the perfect balance of flavor, texture, and health-conscious benefits.

  • 1 large egg: Binds the ingredients and adds richness.
  • 2 Tbsp liquid egg whites: Boosts protein and helps with structure without adding significant fat. Carton egg whites work perfectly.
  • 1/3 cup unsweetened applesauce: A fantastic natural sweetener and fat replacer, adding moisture to the muffins.
  • 2 Tbsp granulated sugar: Just enough to enhance sweetness without overpowering the natural flavors or increasing WW points.
  • 1 tsp vanilla extract: A key flavor enhancer, complementing the chocolate beautifully.
  • 3/4 cup 1% milk: Provides moisture and helps create a tender crumb. Feel free to use unsweetened almond milk for fewer calories if preferred.
  • 1 1/4 cup all-purpose flour: The structural base of your muffins.
  • 1/3 cup unsweetened cocoa powder: Delivers that deep, rich chocolate flavor. Ensure it’s unsweetened for better control over sugar content.
  • 1 tsp baking powder: A leavening agent that helps the muffins rise and become fluffy.
  • 1/2 tsp baking soda: Works with the acidic ingredients (like cocoa and applesauce) to aid in leavening and tenderness.
  • 2 Tbsp mini chocolate chips: Adds bursts of melted chocolate goodness throughout the muffins. Mini chips distribute more evenly.
  • 4 Oreo thin cookies: The secret ingredient for the delightful cookie crumble topping and a hint of classic Oreo flavor. Thins are chosen to keep points low.

How to Make Chocolate Cookie Muffins: A Step-by-Step Guide

Follow these simple instructions to bake a batch of these incredibly tasty and healthy chocolate cookie muffins. Achieving bakery-quality muffins at home has never been easier!

  1. Preheat and Prep: Begin by preheating your oven to 350°F (175°C). While the oven heats up, prepare a regular-sized 12-cup muffin tin by generously spraying it with nonstick cooking spray. This will ensure your muffins release easily after baking.
  2. Wet Ingredients Mix: In a large mixing bowl, whisk together the whole egg, liquid egg whites, and granulated sugar until well combined. Now, carefully remove the creamy centers from your four Oreo thin cookies and add this cream into your wet ingredient mixture. Whisk vigorously again to ensure the cream centers are thoroughly blended into the batter, adding a subtle sweetness and flavor. Set the separated Oreo cookie wafers aside; they will be used later for the crumble topping.
  3. Incorporate Liquids: Stir in the unsweetened applesauce, 1% milk, and vanilla extract into the wet mixture. Mix everything well until you have a smooth, consistent liquid base.
  4. Add Dry Ingredients: To the wet ingredients, add the all-purpose flour, unsweetened cocoa powder, baking powder, and baking soda. Stir gently until just combined. Be careful not to overmix; a few lumps are perfectly fine and often result in a more tender muffin. Overmixing can lead to tough muffins.
  5. Fold in Chocolate Chips: Gently fold in the mini chocolate chips until they are evenly distributed throughout the batter. Then, divide the batter evenly among the 12 prepared muffin cups, filling each approximately two-thirds full.
  6. Prepare the Crumble Topping: Take the reserved Oreo cookie wafers and place them into a small zip-top bag. Using a rolling pin or the back of a spoon, crush the wafers into fine crumbs. Sprinkle these delicious cookie crumbs generously over the tops of the filled muffin cups. This creates the signature “cookie crumble” that makes these muffins so special.
  7. Bake and Serve: Place the muffin tin into the preheated oven and bake for approximately 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Once baked, remove the tin from the oven and let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature. Enjoy your perfectly baked chocolate cookie muffins!

Different Ways to Customize and Change Up This Recipe

While these chocolate cookie muffins are fantastic as is, don’t hesitate to get creative and put your own spin on them. Here are a couple of ideas to inspire you:

  • Peanut Butter Cookie Muffins: For a delightful twist, consider using Nutter Butter cookies instead of Oreos. If you go this route, simply omit the unsweetened cocoa powder from the batter and replace it with an additional 1/4 cup of flour to maintain the correct consistency. The result will be a wonderfully rich and flavorful peanut butter cookie muffin, perfect for peanut butter lovers.
  • Cookies and Cream Supreme: If you’re aiming for an even more pronounced “cookies and cream” flavor profile, swap out the mini chocolate chips for white chocolate chips. The contrast of the dark chocolate muffin base with sweet white chocolate and the Oreo crumble will be absolutely irresistible.
  • Add a Hint of Coffee: A teaspoon of instant espresso powder added to the dry ingredients will intensify the chocolate flavor without making the muffins taste like coffee. It’s a chef’s secret for boosting chocolate.
  • Nutty Crunch: Fold in a tablespoon or two of finely chopped walnuts or pecans along with the mini chocolate chips for an extra layer of texture and healthy fats.

Tips and Tricks for Making Perfect Chocolate Cookie Muffins

To ensure your muffins turn out perfectly every time, keep these handy tips in mind:

  • Don’t Overmix: This is perhaps the most crucial rule for tender muffins. Mix the wet and dry ingredients just until combined. A few lumps are perfectly acceptable; overmixing develops gluten, leading to tough, chewy muffins.
  • Room Temperature Ingredients: Using room temperature egg and milk helps the ingredients combine more smoothly and creates a more uniform batter, leading to a better rise and texture.
  • Even Muffin Filling: Use an ice cream scoop or a measuring cup to distribute the batter evenly into the muffin cups. This ensures all muffins bake consistently and are uniform in size.
  • Check for Doneness: The best way to tell if your muffins are baked through is to insert a toothpick into the center of one. If it comes out clean (or with a few moist crumbs), they’re ready. If it comes out wet with batter, bake for a few more minutes.
  • Cooling Properly: Allow the muffins to cool in the tin for 5-10 minutes before transferring them to a wire rack to cool completely. This prevents them from becoming soggy on the bottom and makes them easier to remove.

Storage and Freezing Instructions

  • Storing Leftovers: Store any leftover muffins in an airtight container at room temperature for up to 3 days, or in the fridge for up to 7 days. Bringing them to room temperature or a quick zap in the microwave will bring back some of their freshness.
  • Freezing for Later: These muffins freeze exceptionally well, making them perfect for meal prepping healthy snacks. Once completely cooled, place them in a single layer on a baking sheet and freeze until solid (about 1-2 hours). Then, transfer the frozen muffins to a freezer-safe zip-top bag or airtight container. They will keep in the freezer for up to 3 months. When you’re ready to enjoy, simply thaw them at room temperature or warm them gently in the microwave. This allows you to make large batches and have easy, on-the-go snacks readily available whenever cravings strike.

Frequently Asked Questions (FAQs) About These Muffins

Q: Can I use regular Oreo cookies instead of Oreo Thins?

A: Yes, you can use regular Oreo cookies if you prefer, but be aware that using regular Oreos will increase the Weight Watchers SmartPoints per muffin. Oreo Thins are specifically chosen for this recipe to help keep the point value low. If you do use regular Oreos, you might want to adjust your point tracking accordingly.

Q: What if I don’t have unsweetened applesauce? Can I use something else?

A: Unsweetened applesauce is key for moisture and reducing fat/sugar. You could try using an equal amount of plain Greek yogurt or mashed ripe banana (if you don’t mind the banana flavor), but these substitutions might slightly alter the texture and flavor profile, as well as the point value. Unsweetened pumpkin puree is another option for moisture but will add a subtle flavor. Stick with applesauce for the intended results if possible.

Q: Can I make these muffins gluten-free?

A: While the recipe calls for all-purpose flour, you can certainly experiment with a 1:1 gluten-free baking flour blend. Look for a blend that contains xanthan gum for best results, as it helps with structure. The texture might be slightly different, but many gluten-free blends work well in muffin recipes.

Q: How can I make these muffins even lower in sugar?

A: You can try reducing the granulated sugar slightly, though 2 tablespoons is already quite low for 12 muffins. Alternatively, you could substitute part or all of the granulated sugar with a zero-calorie granulated sweetener like erythritol or stevia blend. Taste the batter before baking (if it doesn’t contain raw egg, which ours does) or make a small test batch to ensure the sweetness level is to your liking.

Q: Can I add other mix-ins to the batter?

A: Absolutely! These muffins are very versatile. Besides the suggestions above (nuts, different chocolate chips), you could try adding a tablespoon of shredded coconut, a small amount of orange zest for a chocolate-orange flavor, or even a few dried cranberries or cherries for a fruity twist. Just be mindful that additional mix-ins may slightly affect the nutritional values and WW points.
