Packed with healthy carbohydrates from the pasta and an impressive amount of protein, it’s a meal that not only tastes incredible but also makes you feel good about eating it often.

We’ve managed to create a dish that delivers all the creamy, cheesy goodness you desire, without the usual high fat and calorie count. You have complete control over the spice level; simply adjust the amount of buffalo sauce to dial up the heat or mellow it down. Why This Buffalo Chicken Pasta Bake Should Be Your Next Dinner!

It’s a fantastic departure from traditional tomato-based pasta dishes.

While classic spaghetti and meatballs or marinara dishes hold a special place in our hearts, sometimes your palate craves something different. This Buffalo Chicken Pasta Bake offers a vibrant and exciting alternative. The combination of spicy buffalo sauce and melted, lightened-up cheese creates a uniquely comforting yet incredibly filling experience. It’s savory, a little tangy, and has that signature kick that buffalo lovers adore, making it a perfect antidote to mealtime monotony. Give your weekly menu a delightful twist!

It provides an exciting new way to enjoy chicken.

Let’s be honest, chicken for dinner can become quite uninspired if you’re not careful. This recipe actively combats boredom by infusing your chicken with bold flavors. It’s not just “spicing it up” literally with the hot sauce, but also transforming the texture and experience. Combined with perfectly al dente pasta, creamy light ranch, and softened cream cheese, the buffalo chicken takes on a divine, succulent quality that you won’t soon forget. It’s a revelation for chicken lovers looking for innovation.

You’ll rarely find such a satisfying, healthy pasta dish under 300 calories.

Pasta dishes, especially those involving cheese and creamy sauces, often come with a hefty calorie count, making them a challenge for those managing their intake. At most restaurants, a similar dish would easily exceed 500-800 calories. This recipe breaks that mold. By strategically using lightened-up ingredients like Banza pasta, low-fat dairy, and lean chicken, we’ve created a dish that’s rich in flavor and texture, yet remarkably low in calories and fat. You can indulge in a generous serving without derailing your health goals – a true culinary win!

Essential Ingredients for Your Buffalo Chicken Pasta Bake:

Crafting this delectable pasta bake requires a simple list of ingredients, carefully chosen to maximize flavor while keeping it light and nutritious. Here’s what you’ll need:

  • 2 cups Banza Pasta (gluten-free!) or whole wheat high-fiber pasta. (Measure uncooked). Banza pasta is an excellent choice for its higher protein and fiber content, making this dish even more satisfying and great for gluten-sensitive diets.
  • 10 oz (about 2 cups) cooked, shredded chicken. This can be prepped ahead of time in a crockpot, stovetop, or simply by using a store-bought rotisserie chicken for ultimate convenience.
  • 6 oz softened light cream cheese. Softening it to room temperature is crucial for achieving a smooth, creamy sauce.
  • ¼ cup light ranch dressing. This adds a tangy, cooling element that perfectly complements the buffalo spice.
  • ½ cup Frank’s RedHot Sauce. The classic buffalo flavor comes from this iconic hot sauce. Feel free to adjust to your preferred spice level.
  • ⅔ cup reduced-fat shredded cheese. We recommend a blend like cheddar or mozzarella for great melt and flavor without excess fat.

How to Make Buffalo Chicken Pasta Bake (Step-by-Step Guide):

Creating this wholesome and flavorful Buffalo Chicken Pasta Bake is surprisingly straightforward. Follow these simple steps for a perfect meal every time.

  1. Cook the Pasta: Begin by boiling your chosen pasta according to the package instructions until it’s al dente. Ensure it’s not overcooked, as it will bake further in the oven. Once cooked, drain the water thoroughly and set the pasta aside.
  2. Prepare for Baking: Preheat your oven to 350°F (175°C). While the oven heats, lightly spray a 9×13-inch casserole dish with nonstick cooking spray. This prevents sticking and makes for easier cleanup.
  3. Mix Wet Ingredients: In a large mixing bowl, combine the cooked pasta and shredded chicken. In a separate, smaller bowl, cream together the softened light cream cheese, light ranch dressing, and Frank’s hot sauce. Use a hand mixer or stand mixer to ensure the mixture is smooth and well-combined, free of lumps.
  4. Combine and Add Cheese: Pour the creamy hot sauce mixture over the pasta and chicken. Add ⅓ cup of the reduced-fat shredded cheese to the bowl, reserving the remaining ⅓ cup for later.
  5. Bake to Perfection: Mix everything thoroughly until the pasta and chicken are evenly coated in the rich, spicy sauce. Transfer the mixture into your prepared casserole dish, spreading it out evenly. Bake in the preheated oven for 20 minutes. After 20 minutes, remove the casserole, sprinkle the remaining ⅓ cup of shredded cheese evenly over the top, and return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  6. Serve: Carefully remove the Buffalo Chicken Pasta Bake from the oven. Allow it to cool for a few minutes before cutting it into 6 generous servings. Enjoy!

Delicious Ways to Customize Your Buffalo Chicken Pasta Bake:

One of the best things about this Buffalo Chicken Pasta Bake is its versatility. Feel free to experiment with these suggestions to make it uniquely yours or to suit different dietary needs and preferences.

  • Pasta Variety: While I personally love using penne or rotini for their ability to hold the creamy sauce, any pasta shape will work beautifully. Using Banza Pasta is a fantastic way to keep this dish gluten-free while boosting its nutritional profile with extra protein and fiber. If Banza isn’t available, whole wheat or chickpea pasta are also great alternatives for a higher fiber, more satisfying meal.
  • Adjusting the Heat: If you’re sensitive to too much spice, easily dial down the heat by reducing the amount of Frank’s RedHot sauce. The recipe calls for ½ cup, but you could start with ¼ cup and substitute the other ¼ cup with water or chicken broth to maintain sauce consistency without sacrificing flavor. For an extra kick, a pinch of cayenne pepper or a dash of your favorite spicier hot sauce can be added.
  • Homemade Light Ranch: For an even healthier twist and potentially lower overall calories and Weight Watchers points, consider making your own lightened-up ranch dressing. My zero SmartPoint ranch recipe is a big hit with my followers and is incredibly simple to prepare, offering a fresh, tangy flavor that truly elevates this dish.
  • Casserole Dish Size: I typically use a 9×13-inch casserole dish for a more spread-out pasta bake, but if you prefer a thicker, deeper dish with more defined layers, a smaller 9×9-inch baking dish would work perfectly. Just be mindful that baking times might vary slightly.
  • Add Vegetables: Boost the nutrient content and add more texture by incorporating your favorite vegetables. Steamed broccoli florets, diced bell peppers, sautéed spinach, or even some frozen peas can be stirred in with the pasta and chicken mixture before baking.
  • Blue Cheese Crumbles: For an authentic buffalo flavor experience, consider crumbling a small amount of blue cheese over the top of the casserole along with the shredded cheese during the last 5 minutes of baking. A little goes a long way to add that distinctive tangy sharpness.

Tips and Tricks for Making Your Buffalo Chicken Pasta Bake Perfect Every Time:

Even experienced cooks can benefit from a few clever tips to make their Buffalo Chicken Pasta Bake shine. Here are some of my favorite strategies for success:

  • Effortless Shredded Chicken: My go-to method for shredded chicken is the crockpot. I typically prepare a larger batch once a week and store it in the fridge, making it readily available for various recipes like this pasta bake, wraps, or salads. Simply add boneless, skinless chicken breasts to your crockpot with 1-2 cups of chicken broth (or water if broth isn’t handy), and cook on high for 3-4 hours. Once cooked, use two forks to easily shred it. If it resists shredding, it needs a bit more cooking time. For ultimate ease, you can even use a hand mixer or stand mixer to shred the chicken in seconds!
  • Quick Chicken Options: If you’re short on time and haven’t prepped shredded chicken, don’t fret! Any cooked chicken will work. Grill some chicken breasts and dice them, or pick up a pre-made rotisserie chicken from the grocery store. Shred or chop it into small pieces, and you’re good to go. This makes the recipe incredibly adaptable for busy weeknights.
  • Storage and Leftovers: This dish is fantastic for meal prepping! Store any leftover Buffalo Chicken Pasta Bake in an airtight container in the refrigerator for 2-3 days. The flavors tend to meld even more overnight, making leftovers just as delicious, if not more so, the next day. This casserole also freezes exceptionally well. You can freeze it cooked or even prep it and freeze it unbaked for a convenient “bake-from-frozen” meal later on. Just cover tightly with foil.
  • Reheating Instructions: To reheat a previously baked and chilled or frozen pasta bake, first allow it to thaw in the refrigerator if frozen. Then, bake in the oven at 350°F (175°C) for about 15-20 minutes, or until thoroughly heated through and bubbly. If you have an air fryer, individual portions can be reheated beautifully there for a quick and crispy finish.
  • Serving Suggestions: This hearty pasta bake is a complete meal on its own, but it pairs wonderfully with a simple green salad dressed with a light vinaigrette to balance the richness. A side of steamed or roasted vegetables like asparagus or green beans would also make for a perfect complement.
