Gourmet Maple Pecan Banana French Toast

Maple Pecan Banana French Toast: A Wholesome & Delicious Breakfast Recipe (Weight Watchers Friendly)

Breakfast is, without a doubt, my absolute favorite meal of the day. It’s the perfect time to experiment with flavors, get creative in the kitchen, and set a positive, energized tone for the hours ahead. However, I must confess to a long-standing culinary challenge: my inherent dislike for plain eggs. I know, I know – eggs and breakfast are practically synonymous, like milk and cookies! But while I can’t enjoy them on their own, I’ve discovered innovative ways to incorporate them into recipes, transforming them into delicious, “eggy” creations that I truly love. This journey of culinary creativity led me to perfect French toast, a dish where eggs play a vital, yet perfectly blended role.

Inspired by my popular banana cinnamon French toast recipe, a consistent morning favorite, I decided to elevate that concept. The goal was to create something even more indulgent, yet still perfectly aligned with a health-conscious lifestyle. The result is this utterly delicious Maple Pecan Banana French Toast – a recipe that brings together the sweet comfort of bananas, the rich crunch of pecans, and the warm embrace of maple. Best of all, each generous serving clocks in at just 6 Freestyle SmartPoints, making it an ideal choice for anyone looking for a wholesome and satisfying breakfast without compromising on taste or dietary goals.

This recipe isn’t just about combining ingredients; it’s about crafting an experience. It’s about taking humble slices of bread and transforming them into golden, fluffy masterpieces, infused with natural sweetness and delightful textures. Whether you’re a long-time French toast aficionado or looking for a new breakfast staple, this Maple Pecan Banana French Toast promises to deliver a burst of flavor and a feeling of contentment that will carry you through your morning. Prepare to indulge in a breakfast that tastes like a weekend treat but fits effortlessly into your daily routine.

Maple Pecan Banana French Toast stack
6 SP blue & purple, 7SP green/6pp per serving

Ingredients

  • 6 slices low calorie bread, I used Sara Lee 45 calorie multigrain bread
  • 1 large mashed banana
  • 1 egg
  • 1/4 cup milk, I used 1%
  • 1 tsp vanilla
  • 3 Tbsp no sugar added maple syrup, see picture below
  • 2 Tbsp chopped pecans

Instructions

  • In a bowl whisk together your egg and milk, then add in the mashed banana, maple syrup, and vanilla extract. Whisk until the mixture is smooth and well combined.
  • Preheat a non-stick pan or griddle on your stove over medium heat. Ensure it’s generously sprayed with non-stick cooking spray to prevent sticking.
  • Dip each slice of bread into the prepared egg and banana mixture, ensuring both sides are thoroughly coated. Gently shake off any excess liquid before placing it onto the heated pan.
  • Allow the French toast to cook for about 8-10 minutes on the first side. Due to the thicker, banana-infused batter, it will require a bit more time than traditional French toast. Flip carefully and cook for an additional 8-10 minutes, or until both sides are golden brown and cooked through.
  • Once cooked, serve immediately. For each 3-piece serving, sprinkle 1 tablespoon of chopped pecans and a drizzle of additional no-sugar-added maple syrup. For an extra touch of sweetness and presentation, a light dusting of icing sugar is optional.

The Magic Behind the Ingredients

Every ingredient in this Maple Pecan Banana French Toast recipe plays a crucial role in its success, both in terms of flavor and nutritional value:

  • Low-Calorie Multigrain Bread: The foundation of our French toast. Opting for a low-calorie, high-fiber bread like Sara Lee 45 calorie multigrain bread not only keeps the SmartPoints low but also adds a beneficial dose of whole grains and complex carbohydrates. Its sturdy texture also holds up beautifully to the banana-infused batter without becoming soggy.
  • Mashed Banana: This is the star ingredient that truly sets this French toast apart. A ripe, mashed banana provides natural sweetness, a creamy texture, and a delightful fruity aroma that permeates every slice. It eliminates the need for much-added sugar in the batter and contributes valuable potassium and other nutrients.
  • Egg and Milk: The classic French toast binder. The single egg and 1% milk create the perfect custard-like coating that turns golden and fluffy when cooked. The egg provides protein, while the milk adds a touch of richness and helps distribute the flavors evenly.
  • Vanilla Extract: A splash of vanilla is essential for enhancing the overall aroma and adding a layer of sophisticated sweetness that complements the banana and maple beautifully.
  • No-Sugar-Added Maple Syrup: To keep this recipe Weight Watchers friendly, using a no-sugar-added maple syrup is key. It delivers all the iconic maple flavor without the extra calories and sugars, allowing you to enjoy that classic French toast topping guilt-free.
  • Chopped Pecans: These provide a wonderful textural contrast and a rich, buttery, nutty flavor that pairs exquisitely with banana and maple. Pecans are also a good source of healthy fats and antioxidants, adding to the nutritional benefits.

Achieving French Toast Perfection: Tips & Tricks

While this recipe is straightforward, a few tips can help you achieve French toast perfection every time:

  1. Use Ripe Bananas: The riper the banana, the sweeter and more flavorful your batter will be. Look for bananas with brown spots for optimal sweetness and mashability.
  2. Don’t Over-Soak: While you want the bread to be well-coated, don’t let it soak for too long, especially with thinner bread. A quick dip and flip on each side are usually sufficient to absorb enough batter without making the bread fall apart.
  3. Proper Pan Temperature: Medium heat is ideal. If the pan is too hot, the outside will burn before the inside cooks through. If it’s too cool, the French toast will dry out and not achieve that beautiful golden crust. A medium-low heat for a slightly longer time ensures a perfectly cooked interior.
  4. Be Patient with Cooking Time: As noted in the instructions, the banana in the batter makes it heavier and requires a longer cooking time than traditional French toast. Resist the urge to flip too soon; allow ample time for a golden-brown crust to form and the interior to cook through.
  5. Non-Stick Spray is Your Friend: Even with a non-stick pan, a good spray of cooking oil helps ensure nothing sticks and contributes to that desirable crispy exterior without adding significant fat.

Customizing Your Breakfast: Variations and Toppings

This Maple Pecan Banana French Toast is fantastic as is, but don’t hesitate to personalize it with your favorite toppings or slight variations:

  • Extra Fruit: Add fresh berries like blueberries, raspberries, or sliced strawberries on top for a burst of freshness and color.
  • Spices: A pinch of cinnamon or nutmeg in the batter can further enhance the warm, comforting flavors.
  • Different Nuts: If pecans aren’t your preference, try chopped walnuts, almonds, or even a sprinkle of toasted shredded coconut for a different nutty texture.
  • Yogurt Drizzle: A spoonful of plain Greek yogurt or a vanilla-flavored light yogurt can add a creamy tang and extra protein.
  • Powdered Sugar: While optional for Weight Watchers, a light dusting of powdered sugar (confectioners’ sugar) gives it a classic diner feel.
  • Protein Boost: Serve with a side of lean turkey bacon or a scoop of cottage cheese for an even more protein-packed meal.
