  • 4 medium russet potatoes
  • 1 Tbsp olive oil
  • 1/3 cup fat-free sour cream
  • 1/3 cup 1% milk
  • 2 Tbsp light butter
  • 1 Tbsp ranch seasoning
  • Dash of salt and pepper
  • 2 jalapenos, seeded and diced
  • 1 cup reduced-fat shredded cheddar cheese
  • 6 Tbsp real bacon bits *or 6 slices of cooked center cut bacon

Instructions 

  • Preheat your oven to 400°F (200°C). Thoroughly wash the russet potatoes, then lightly brush them with olive oil. Bake the potatoes in the preheated oven for 1 hour, or until they are tender when pierced with a fork.
  • Once baked, allow the potatoes to cool slightly so they are easier to handle. Carefully cut each potato in half lengthwise. Scoop out the cooked potato flesh into a large mixing bowl, making sure to leave about 1/2 inch of potato inside the skins to maintain their structure.
  • In the bowl with the scooped potato flesh, combine the fat-free sour cream, 1% milk, light butter, ranch seasoning, and a dash of salt and pepper. Mix until well combined and creamy.
