2. Prepare Your Compote: Begin by making your delicious fruit compote. We’ve experimented with various fruits, but for this recipe, fresh strawberries are the star. While a smaller Le Creuset coquette pan works for test batches, the larger Le Creuset #20 Enameled Sauce Pot, with its convenient wooden handle and spout, proved ideal for making a generous batch of strawberry compote.

3. Cook the Compote: Combine the chopped strawberries, vanilla extract, maple syrup, and lemon juice in your saucepot. Cook over medium heat, covered, for about 15 minutes, stirring occasionally. The compote is ready when the strawberries are soft and wonderfully juicy.

4. Cool the Compote: Once cooked, remove the compote from the heat and let it rest on a trivet to cool. We used our beautiful new 8-inch oyster enameled star trivet, purchased from the Lodge Cast Iron factory store in South Pittsburg, Tennessee. 5. Mix the Batter: In a large mixing bowl, combine your dry pancake mix with water. For best results and to avoid overmixing, use a wooden spoon instead of a metal whisk. Stir just enough to break up the large lumps; a few small lumps are perfectly fine and actually desirable. Overmixing can lead to a thin, tough pancake.

6. The Batter Consistency Secret: Here’s a crucial tip for giant, spreadable pancakes: aim for a slightly thinner batter than typically suggested on packaged mixes. I’ve added an extra quarter-cup of water to the ingredients list for this reason. This optimal consistency is key to achieving that expansive, round “pizza” shape on your outdoor griddle. While you want it thin enough to spread, it should still be thick enough to incorporate any desired add-ins like berries, bananas, or pecans without them sinking immediately.

7. Organize Your Griddle Station: Before you start cooking, set up your outdoor grill area. Stack the plates you’ll be using on the right-side shelf of your Blackstone for quick and easy serving. If you’re planning a massive stack, a single extra-large plate might suffice. Remember, for these “pancake pizzas,” the biggest plates you have are the best choice!

8. Grab Your Flipping Tools: For easy handling of these giant pancakes, I recommend a combination of tools: a regular long griddle spatula for your dominant hand and a second, wide spatula to assist in lifting the opposite side. This two-spatula method makes flipping much smoother. In my experience, the left side of the griddle can sometimes run a little hotter than the right when both burners are set equally, so adjust your heat settings as needed to ensure consistent cooking temperatures across both zones.

10. Pour Your Pancake Pizzas: This recipe makes enough batter for two XL Big Fat Pancake Pizzas. Eyeball the amounts as you pour half of the batter onto the right side of the griddle and the other half onto the left. Start pouring precisely in the center of each griddle half, allowing the batter to slowly spread outwards in a concentric fashion. Aim for a giant, round “hubcap” shape reminiscent of a vintage Buick Skylark or Dodge Charger. If one pancake appears slightly smaller, add a little more batter to its center. Our test batches shown in the photos could even use a couple more inches in diameter, which, as mentioned, comes down to perfecting that dry mix to water ratio.

11. The Quick Cook and First Flip: Things happen fast here! In our initial test, the bottoms darkened quickly, so we recommend setting the temperature even lower and being ready to flip promptly. Cook the pancakes until you see bubbles appearing on the surface and the edges no longer look shiny or wet. This usually takes only a minute or two – often less time than you’d expect. Be particularly vigilant with the center of the left side, as it can scorch batter rapidly. You can use your spatula combo to gently peek underneath to check for a golden brown color. This is also the perfect moment to press a fun character mold into the batter before the first flip!

12. Second Side Perfection: Carefully flip the pancakes and cook for another 1-2 minutes. When they are fully cooked, both sides should be beautifully golden brown, and the center should feel firm to the touch.

13. Serve and Clean Up (Initial): Remove the cooked pancakes from the griddle. You can stack them on a single, extra-large plate or serve one per plate, depending on your setup from step 7. Turn off the burners and close the propane tank. Use your griddle spatula or cleaning tool to scrape any leftover food bits into the back grease tray.

14. Blackstone Cleanup (Easy Mode): The Blackstone griddle truly excels in easy cleanup. Squirt a little water onto the still-warm surface and carefully wipe it down with a doubled paper towel. Then, take your 3.8-ounce Eazy Beezy seasoning push-up stick or your preferred Blackstone seasoning and conditioner, and rub it across the hot surface as if you’re writing your name. With another wad of paper towels, spread the seasoning evenly across the entire surface. Close the hood, and your Blackstone is perfectly seasoned and ready for its next cooking session. Cleanup is so effortless, it’s practically part of the cooking process!

15. Dress Your Pancake Pizza: Now for the grand finale – decorating your “pancake pizzas”! Place two pats of unsalted butter directly in the center of your golden pancake. Next, ladle a generous serving of your homemade strawberry compote onto the center and swirl it outwards, just like a pizza chef spreading tomato sauce. Finally, generously sprinkle powdered sugar all over the pancake, mimicking the way you’d dust cheese over a savory pizza. This creative presentation is precisely why we call them Pancake Pizzas!

Achieving that truly expansive, round shape that fills most of each heating zone relies on a free, consistent pour. Use a large mixing bowl with a spout, and steady it with your weaker hand while pouring a continuous stream of batter directly into the middle of your designated cooking area until it spreads out wide.

Achieving the Perfect Round Shape: During our initial trials, some pancakes came out a bit oblong. If your pancakes aren’t naturally forming a beautiful round shape, it’s a strong indicator that your batter is too thick. When the consistency is just right (slightly thinner than usual), it will effortlessly spread into a perfect circle when poured. Always pour from directly overhead for the most symmetrical results.

Avoid Buttering the Griddle: Stick to vegetable oil in your Blackstone squirt bottle for greasing the griddle surface. Resist the temptation to throw pats of butter directly onto the hot griddle. Butter browns very quickly and can easily burn, leading to a scorched taste. We’ve ensured that rich butter flavor is present within the batter and as a topping, so there’s no need to use it on the cooking surface.

Storage Solutions: Should you find yourself with any of these glorious Giant Pancakes leftover (a rare but possible occurrence!), place them in an airtight container. They will keep fresh in your refrigerator for up to four days.

Easy Reheating: It’s highly probable you’ll have leftover pancakes from this recipe! I personally only managed to eat half of mine, and we divided the remainder into Pyrex trays. EXTRA LARGE BIT FAT PANCAKE PIZZAS

Ingredients 

Batter

  • 2 cups Pearl Milling Buttermilk Complete Dry Mix
  • 1 3/4 cup water
  • 1/4 cups confectioner’s sugar
  • 2 tbsp unsalted butter or vegan butter

Compote:

  • 1 pound container fresh strawberries, chopped
  • 1/4 cup maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon freshly squeezed lemon juice

Instructions 

  • You don’t have to preheat anything. The Blackstone reaches desired temperature with the snap of your fingers so don’t waste your propane grill fuel. Just prep your food.
  • Make your compote. We did a test batch with raspberries in a Le Creuset coquette pan, but the larger Le Creuset #20 Enameled Sauce Pot with wooden handle and spout was the perfect kitchen essential here and we used strawberries for this one.
  • Mix the strawberry pieces, vanilla extract, maple syrup and lemon juice into the sauce pot. Cook your compote over medium heat and cover for 15 minutes, stirring occasionally, and remove when the strawberries are soft and juicy.
  • Rest the compote on a trivet like the new 8-inch oyster enameled star we just bought last month at the Lodge Cast Iron factory store in South Pittsburg, Tenn. The compote will thicken as it cools.
  • Make your batter. Use a wooden spoon instead of a whisk and combine the dry mix with water. Stir enough to remove large lumps, and avoid overmixing to make it too thin. It’s easier to overmix with a metal whisk. Small lumps are good.
  • Here’s the secret move: Go thinner with your batter than the box instructions. I added an extra quarter-cup of water in the ingredients list above. Practice will pay off with this step on your outdoor griddle. You want it thick enough to incorporate berries, bananas, pecans or anything else you like inside your pancakes. But you want it thin enough that it will spread far and wide on your flat top grill when you pour the batter in the steps below.
  • Prep your outdoor grill area. However many plates you will serve, stack them on the right shelf of your griddle so you’ll be ready to remove quickly. If you’re serving a stack, then you just need one plate. Again, use the largest plates possible if you’re doing this right.
  • Set out your flipping utensils. I’ve combined my regular long griddle spatula for my dominant hand with another spatula that is wide enough to lift the opposite side of the pancake pizzas. This makes for easy turning of the pancakes, but if you want to have even more fun with Blackstone griddle accessories, check out this Big Green Egg aluminum pizza peel and get under the whole thing. Kids will love that! One proviso, the Blackstone still has an attached hood and you just want to make sure there is clearance for flipping these mighty flapacks.
  • Ignite your portable Blackstone grill to medium low and squirt cooking oil onto the griddle surface, spreading it all over the griddle with a spatula. I’ve found that the left side is generally hotter than the right side when both settings are equal, so adjust accordingly so they are cooking exactly the same.
  • We have made enough batter for two XL Big Fat Pancake Pizzas, so just eyeball the amounts as your pour half of the batter onto the right side and the other half onto the left side. Cook until bubbles appear and the edges of the pancake no longer look shiny and wet. It’s a minute or two, generally less time than you are expecting. The left center can scorch batter fast. You can peek underneath with your spatula combo set. Feel free to experiment with a fun character mold before the first flip.
  • Flip the pancakes and cook for another additional 1-2 minutes. When done, they should be golden brown and the center should be firm to the touch.
  • Remove and stack on an extra large single plate, or serve one on each plate, depending on what you brought out in step 7. Turn off the burners and the propane tank. Use your spatula or cleaning tool to scrape any leftover food into the back grease tray.
  • Squirt a little water on the surface and carefully wipe with a doubled paper towel. Carefully rub your 3.8 ounce Eazy Beezy seasoning push-up stick or any other Blackstone seasoning and conditioner across the still-hot surface like you’re writing your first name. Then with another wad of paper towels, rub it all around evenly and then close the hood and it’s ready for the next session. Cleanup is so easy on a Blackstone, it made it into one of these steps before eating.
  • Place two pats of unsalted butter in the middle of your pancake. Ladle a generous serving of strawberry compote on the center and swirl it around like a pizza chef spreading tomato sauce onto the pizza. Then sprinkle the powdered sugar all over the pancake just like you’re sprinkling cheese all over your pizza. This is why we call them Pancake Pizzas!
