This Berry Funfetti Pancake Pie is a delicious and incredibly easy breakfast treat, perfect for those mornings when you want something special without a lot of fuss. Making 4 generous servings, each slice is wonderfully satisfying and comes in at just 3 SmartPoints on Weight Watchers Blue, Green & Purple plans, making it a fantastic healthy option for the whole family.

Ingredients 

  • 1/3 cup fresh raspberries
  • 1/3 cup fresh diced strawberries
  • 1/4 cup frozen blueberries, fresh will work perfectly as well
  • 1/2 cup Kodiak Cakes high protein waffle/pancake mix
  • 2 Tbsp funfetti cake mix, I typically use Pillsbury bought in the U.S, but any white cake mix will work beautifully. A box will keep for a long time in your cupboard, perfect for this and other recipes!
  • 1 Tbsp sprinkles
  • 1/2 cup water
  • 1 Tbsp icing, I used Betty Crocker vanilla, but any light icing will do!

  • Preheat your oven to 350°F (175°C) to ensure even baking and a perfectly golden crust.
  • Lightly spray a round 8-inch baking dish with non-stick cooking spray, making sure to cover the bottom and sides thoroughly to prevent any sticking.
  • In a medium mixing bowl, combine the Kodiak Cakes mix, funfetti cake mix, sprinkles, and water. Stir gently until just combined – it’s crucial to avoid overmixing to keep the pancake light and fluffy. Pour the prepared batter evenly into your sprayed baking dish.
  • In a separate small bowl, gently mix your fresh raspberries, diced strawberries, and frozen blueberries. Carefully and evenly spoon this vibrant fruit mixture over the pancake batter in the dish, ensuring a good distribution of berries in every slice.
  • Bake in the preheated oven for approximately 25 minutes, or until a toothpick inserted into the center comes out clean and the edges of the pie are beautifully golden brown. Baking times may vary slightly, so keep an eye on it!
