The Stars of the Show: Cinnamon Swirl and Cream Cheese Glaze

For those who relish creating delightful breakfasts on the weekends, these pumpkin spice pancakes are a dream come true. While the pumpkin spice pancake batter itself is wonderfully flavorful, the true magic unfolds with the addition of two show-stopping elements: the irresistible cinnamon swirl and the silky-smooth cream cheese glaze. These aren’t just ordinary pancakes; they are an experience, reminiscent of your favorite cinnamon rolls but in a lighter, fluffier pancake form.

The cinnamon swirl, carefully piped onto the cooking pancakes, melts and caramelizes slightly, creating pockets of spiced sweetness that perfectly complement the earthy pumpkin flavor. It’s a delightful surprise in every bite, adding both visual appeal and an incredible depth of flavor. Then, there’s the cream cheese glaze – a decadent crown that takes these pancakes from great to absolutely extraordinary. Its tangy sweetness cuts through the richness of the pancakes, creating a balanced and utterly addictive taste sensation. Paired with a steaming cup of coffee and a side of crispy bacon, you’ll have a breakfast that’s not just a meal, but the perfect kick-off to an amazing day, filled with warmth and satisfaction.

Crafting Your Perfect Pumpkin Spice Pancakes: From Scratch or Mix

One of the beauties of this recipe is its flexibility. You have the option to craft your pumpkin spice pancake batter entirely from scratch, allowing you to control every ingredient and tailor the spice levels to your preference. If you enjoy the process of baking and appreciate the rich flavor of homemade, then whipping up the batter from basic pantry staples will be a rewarding experience. Alternatively, for those busier mornings or when you simply want to streamline the process, a good quality pancake mix can be a fantastic shortcut. Just remember to adjust your mix by replacing half of the suggested oil or butter with pumpkin puree to infuse that essential autumnal flavor directly into your pancakes.

Regardless of whether you choose the scratch-made route or a convenient mix, the secret to truly outstanding pancakes lies in not overmixing the batter. A few lumps are perfectly fine and will result in a lighter, fluffier pancake texture. Overmixing develops the gluten in the flour, leading to tougher, chewier pancakes, which is certainly not what we’re aiming for here!

Smart Tips for Busy Mornings: Make Ahead & Freeze

Life can be hectic, even during the magical fall season. But that doesn’t mean you have to miss out on these delightful cinnamon swirl pumpkin spice pancakes. If you find yourself with a bit of extra time on your hands over a weekend, consider cooking a few batches of these pancakes and freezing them for later enjoyment. This simple trick allows you to savor this yummy breakfast even on your busiest days.

Here’s how to do it efficiently:

  1. Allow the cooked pancakes to cool completely on a wire rack. This prevents them from getting soggy when stored.
  2. Once cooled, stack them with parchment paper in between each pancake to prevent sticking.
  3. Place the stacks into freezer-safe bags or airtight containers. They can be stored in the freezer for up to 1-2 months.
  4. When you’re ready to enjoy them, simply pop them into the microwave for 30-60 seconds per pancake (or until heated through), or reheat them in a toaster oven for a slightly crispier edge.
  5. While the pancakes are heating, whip up a fresh batch of the cream cheese glaze. It comes together quickly and easily, and a freshly made glaze truly elevates the experience.

This method ensures that a warm, comforting, and seasonally appropriate breakfast is always just minutes away, even when time is a luxury.

Ingredients

  • 2 cups preferred pancake batter with half of oil/butter replaced with pumpkin puree

OR from scratch:

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 1/4 cups milk
  • 1 large egg
  • 1 1/2 tablespoons butter melted
  • 2 Tablespoons pumpkin puree

Cinnamon Swirl:

  • 3 Tablespoons butter
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon

Cream Cheese Glaze:

  • 4 Tablespoons butter room temperature
  • 2 Tablespoons cream cheese room temperature
  • 1/2 cup confectioners’ sugar
  • 1/2 teaspoon vanilla extract
  • + milk optionally, to thin out

Instructions

  • Start out by making the cinnamon swirl mixture. Melt the butter in a pan, stir in the brown sugar and cinnamon and set aside to cool. This allows the mixture to thicken slightly, making it easier to pipe and preventing it from spreading too much on the pancake.
  • Heat your pancake skillet or electric griddle over medium heat. Ensure it’s adequately hot before adding batter; a good test is to flick a few drops of water onto the surface – if they dance and evaporate quickly, it’s ready. Add a small amount of oil or nonstick spray if necessary to prevent sticking.
  • Make your pancake batter by stirring together all pancake ingredients with a wooden spoon or whisk until just combined. Remember, a few lumps are fine! Overmixing will result in tough pancakes. Scoop a 1/3 to 1/2 cup portion onto the skillet for each pancake.
  • As the pancake starts to cook and small bubbles form on the surface, spoon the slightly cooled cinnamon swirl mixture into a piping bag or a small plastic bag (like a Ziploc) with a corner snipped off. Once the pancake is almost fully cooked on one side (edges look set, bubbles are popping), snip off the end of the bag and add a swirl of cinnamon on top of the cooking pancake. Allow the cinnamon mixture to set for at least one minute before carefully flipping and cooking until golden brown and fully cooked on the other side. This ensures the swirl bakes into the pancake without running.
  • Repeat this process for all remaining pancakes, keeping the cooked ones warm on a plate in a low oven if desired. Meanwhile, in a separate bowl, whip together the cream cheese glaze ingredients until smooth and creamy. Ensure butter and cream cheese are at room temperature for the best consistency. You can drizzle this over the hot pancakes with a spoon for a rustic look or use an additional piping bag for more precision – your choice!
  • Serve hot and enjoy the delightful combination of pumpkin spice, cinnamon, and creamy glaze!
