  • 6 eggs
  • 1/2 cup unsweetened almond milk *May substitute with regular milk
  • 2/3 cup unsweetened apple sauce
  • 1.5 Tbsp brown sugar
  • 2 tsp cinnamon
  • 1 tsp vanilla
  • 2 cups diced apples, about 2 medium apples
  • 60 ml 1/4 cup caramel sauce *I used Smuckers fat-free

Instructions 

  • Preheat oven to 350F and spray a regular 12 hole muffin tin with some nonstick cooking spray.
  • Cut up the 12 pieces of low-calorie bread. Cut each piece into about 16 pieces – 4 down and 4 across. Place the bread pieces in a large bowl.
  • In a separate bowl, whisk the eggs and add in the brown sugar. Stir until it is dissolved, and then add the milk, applesauce, vanilla, and cinnamon and stir well.
  • Peel and dice the apples. Make sure they are cut into small pieces! Then add them to the bread and pour the egg mixture on top. Very gently stir the egg mixture into the bread and apple pieces.
  • Spoon the mixture into the 12 muffin cups.
  • Bake in the oven for approximately 30 minutes They are done once the tops are a golden color.
