Essential Ingredients for Prosciutto Mozzarella Chicken Rolls

Gathering the right ingredients is the first step to creating these delightful rolls. Each component plays a crucial role in delivering the incredible flavor and texture:

  • 3 (6 oz) boneless skinless chicken breasts, carefully cut open into two thinner pieces each
  • 2 oz quality prosciutto, thinly sliced
  • 3 oz part-skim mozzarella cheese, shredded or thinly sliced (for optimal melting)
  • ¼ cup finely diced red pepper, adding a touch of sweetness and color
  • ¼ cup finely diced red onion, for a sharp, aromatic kick
  • 1 large egg, for binding the breadcrumbs
  • Juice of half a fresh lemon, to brighten the flavors
  • ½ cup plain breadcrumbs, for a perfectly crisp exterior

When selecting your ingredients, opt for fresh, high-quality items where possible. For the chicken, ensure it’s boneless and skinless to keep the point value low and the protein lean. The prosciutto should be thinly sliced to wrap easily and provide a delicate salty note. Part-skim mozzarella is recommended for Weight Watchers, offering that satisfying cheesy pull with fewer points. Freshly diced vegetables will offer the best flavor and texture contrast to the richness of the meat and cheese.

How to Make Prosciutto Mozzarella Chicken Rolls (Step-by-Step Guide)

Creating these flavorful chicken rolls is a straightforward process. Follow these detailed steps for a perfect result every time:

  1. Begin by sautéing your finely diced red peppers and red onions in a non-stick frying pan. Use a light spray of cooking spray (olive oil or avocado oil based) and cook for about 5 minutes, or until the vegetables have softened slightly and the onions become translucent. Set aside to cool.
  2. While the vegetables cook, preheat your oven to a steady 400°F (200°C). Prepare a baking dish by lightly spraying it with non-stick cooking spray to prevent sticking.
  3. In a small, shallow dish, whisk the egg and the fresh lemon juice together until well combined. This will serve as your binder. On a separate flat plate, spread out the breadcrumbs evenly.
  4. Take each of your 3 boneless, skinless chicken breasts. Carefully cut each breast horizontally into two thinner pieces, effectively butterflying them open so you have 6 pieces, approximately 3 oz each. If the chicken is very thick, you might need to pound it gently to an even thickness (about ¼ to ½ inch) to ensure even cooking and easy rolling.
  5. Divide the 2 oz of prosciutto into 6 equal portions, which will be roughly 0.3 oz per roll. This ensures an even distribution of flavor.
  6. Now, assemble your rolls. Lay a chicken piece flat. Place one portion of prosciutto on top of the chicken, followed by about 0.5 oz of shredded or sliced mozzarella cheese. Spoon a generous amount of the sautéed pepper and onion mix onto the cheese. You can also add a dash of black pepper for extra flavor at this stage. Carefully roll the chicken piece up tightly, encasing the fillings. If needed, secure the roll with one or two toothpicks to hold its shape during cooking.
  7. Dip each rolled chicken piece into the egg and lemon mixture, ensuring it’s fully coated. Then, transfer it to the plate with breadcrumbs, rolling it around until it’s evenly coated on all sides. This breading will give the rolls a delightful crispy exterior.
  8. Place the breaded chicken roll seam-side down in your prepared baking dish. Repeat this process for all remaining chicken pieces until all 6 rolls are assembled and in the dish. Lightly spray the tops of the rolls with a little more cooking spray for an extra golden crisp.
  9. Bake the rolls in the preheated oven for 25 minutes. The chicken should be cooked through (internal temperature of 165°F or 74°C), and the breading should be golden brown and crispy.
  10. Once baked, remove from the oven, let them rest for a couple of minutes, remove any toothpicks, and serve warm. Enjoy these incredibly flavorful and satisfying rolls!

Creative Ways to Customize Your Prosciutto Mozzarella Chicken Rolls

While the original recipe is fantastic as is, don’t hesitate to get creative and customize these rolls to your liking or to use ingredients you have on hand. Here are some ideas to inspire you:

  • Cheese Alternatives: While mozzarella is a classic choice for its meltiness and mild flavor, feel free to experiment with other cheeses. Provolone, Fontina, or even a light Swiss cheese could offer a different flavor profile. Just be sure to account for any changes in Weight Watchers points. A sprinkle of Parmesan cheese mixed into the breadcrumbs can also add a nutty, salty depth.
  • Fresh Herb Boost: To truly elevate the flavors, consider adding fresh herbs to the filling. A few basil leaves tucked inside with the mozzarella would impart a wonderful aromatic freshness that complements the prosciutto beautifully. Fresh parsley or oregano could also be lovely additions.
  • Vegetable Variations: Don’t limit yourself to just red peppers and onions. Sautéed spinach, finely chopped mushrooms, sun-dried tomatoes (packed in water or oil, drained well), or even some finely chopped zucchini could be fantastic additions to the filling, adding more nutrients and flavor dimension.
  • Spice It Up: If you enjoy a bit of heat, a pinch of red pepper flakes in the vegetable sauté or mixed with the breadcrumbs can add a pleasant kick.
  • Different Breading: For a gluten-free option, use gluten-free breadcrumbs. For a lower-carb approach (though it will change the texture), you could try finely crushed pork rinds or almond flour mixed with seasonings for the coating.

Tips and Tricks for Making Perfect Prosciutto Mozzarella Chicken Rolls

Achieving perfectly cooked and flavorful chicken rolls is easy with a few simple tips:

  • Storage: These prosciutto mozzarella rolls are best enjoyed fresh, but they keep beautifully in an airtight container in the fridge for up to seven days. They make excellent leftovers for quick meals throughout the week. Reheat them in the air fryer or oven to regain their crispy exterior. However, it’s important to note that they do not freeze well; the texture of the chicken and cheese can become undesirable after thawing.
  • Even Thickness: To ensure the chicken cooks evenly and rolls easily, it’s beneficial to pound the butterflied chicken breasts to an even thickness (around ¼ to ½ inch) using a meat mallet or a heavy pan. Place the chicken between two pieces of plastic wrap before pounding to minimize mess.
  • Don’t Overfill: While it’s tempting to pack in lots of filling, overfilling the rolls can make them difficult to close and prone to bursting during cooking. Stick to the recommended amounts for the best results.
  • Securing the Rolls: If you find your rolls are having trouble staying together, don’t hesitate to use toothpicks or even kitchen twine to secure them before breading and baking. Just remember to remove them before serving!
  • Crispy Coating: For an extra crispy coating, ensure the rolls are well-drained after dipping in the egg mixture before rolling in breadcrumbs. A final light spray of cooking oil before baking also aids in achieving a golden-brown, crunchy crust.
  • Serve with a Side: These rolls pair wonderfully with a simple side salad, some steamed green beans, or even a light tomato sauce for dipping, enhancing your meal without significantly increasing the point count.
