Each generous serving provides almost 20 grams of protein, ensuring you feel satiated and energized, not deprived. It reheats beautifully, making it just as delightful on day three as it was fresh from the oven, proving its worth as a go-to easy casserole recipe.
Essential Ingredients for Your Chicken Spinach Artichoke Casserole
Gathering the right ingredients is the first step to creating this delectable casserole. Many of these are pantry staples or easily found at your local grocery store. We’ve chosen lighter versions of some dairy products to keep the dish wholesome without compromising on taste or texture, making it a truly healthy casserole.
- 1 (7.5 oz) package of Great Value biscuits (10 small biscuits in the pack): These provide the unique “bubble up” texture and a comforting doughy bite. See our tips for Canadian alternatives.
- 4 oz light cream cheese, softened: The base for our creamy sauce, using light cream cheese helps reduce fat and calories while maintaining a rich consistency.
- 2 tablespoons fat-free mayonnaise: Adds a touch of richness and helps bind the sauce, contributing to the dip-like flavor without adding significant fat.
- ⅓ cup fat-free sour cream: Contributes to the creamy texture and a slight tang, crucial for balancing the flavors and keeping the casserole light.
- 2 garlic cloves, diced: Fresh garlic is essential for a robust, aromatic base that elevates all other flavors in this chicken and spinach casserole.
- 2 tablespoons Parmesan cheese, grated: Provides a sharp, salty, and umami depth, which is a signature component of spinach artichoke dip.
- Dash of salt and pepper: To taste, enhancing all the natural flavors and bringing the seasonings to perfection.
- 3 cups fresh chopped spinach: Packed with nutrients, this healthy green softens beautifully into the dish, contributing to both flavor and health benefits.
- 1 (6 oz) can artichoke hearts, drained and chopped: Adds a distinctive, slightly tangy flavor and a tender texture reminiscent of the classic dip. Make sure they are well-drained to avoid excess moisture.
- 2 cups cooked shredded chicken (about 8oz): The lean protein star of the show. Rotisserie chicken works perfectly here for convenience, making this an even easier weeknight dinner.
- ½ cup reduced-fat shredded mozzarella (I use Trader Joe’s brand): For that irresistible melty, cheesy top and creamy texture throughout. Reduced-fat options keep it lighter without sacrificing the gooey goodness.
How to Create Your Perfect Chicken Spinach Artichoke Casserole: Step-by-Step Guide
Making this casserole is surprisingly simple, yet the results are incredibly impressive. Follow these detailed steps to ensure a perfectly cooked, flavorful dish every time. This recipe is designed for ease, making it a quick and healthy meal option.
- Prepare Your Baking Dish and Oven: Start by preheating your oven to 375°F (190°C). Lightly spray a 9×13 inch casserole dish with nonstick cooking spray. This crucial step prevents sticking and makes cleanup a breeze, ensuring your spinach artichoke casserole bakes perfectly.
- Chop the Biscuits: Take your 10 small biscuits from the package and cut each one into 6 equal pieces. This will give you a total of 60 small dough pieces, which will “bubble up” and create a delightful texture throughout the casserole. Ensuring they are small and uniform helps them cook evenly and contribute to the unique “bubble up” effect.
- Prepare the Creamy Base: In a large mixing bowl, combine the softened light cream cheese, fat-free mayonnaise, fat-free sour cream, grated Parmesan cheese, diced garlic, and a dash of salt and pepper. Stir these ingredients together thoroughly until the mixture is smooth and well combined. This forms the incredibly flavorful and creamy foundation of your healthy chicken casserole.
- Add the Key Fillings: Finely chop your fresh spinach and drained artichoke hearts. Add them directly into the cream cheese mixture. Next, stir in the cooked, shredded chicken. Mix everything gently until all components are evenly distributed within the creamy sauce. This ensures every bite of your chicken spinach artichoke casserole is packed with flavor.
- Incorporate the Biscuit Dough (in batches!): This is a crucial step for the “bubble up” effect. Add only half of your cut biscuit dough pieces into the mixture. Gently fold them in until they are mostly coated. Then, add the remaining biscuit pieces and fold them in again. Adding them in two batches prevents the dough from clumping together and ensures each piece is well integrated and can “bubble” properly.
- Assemble in the Casserole Dish: Spoon the entire mixture into your prepared 9×13 inch casserole dish. Use a spatula or the back of a spoon to spread it out evenly across the dish. Take a moment to check for any clumps of biscuit pieces that might be stuck together and gently separate them for uniform cooking and a consistent texture.
- First Bake and Cheese Topping: Place the casserole in the preheated oven and bake for 30 minutes. After 30 minutes, carefully remove the dish from the oven. Evenly sprinkle the ½ cup of reduced-fat shredded mozzarella cheese over the top of the casserole. Return it to the oven for an additional 10 minutes, or until the cheese is beautifully melted, bubbly, and golden brown, creating an irresistible crust.
- Rest, Cool, and Serve: Once baked, remove the casserole from the oven and let it cool slightly for about 5-10 minutes. This allows the ingredients to set and makes it easier to cut into clean servings. Divide the casserole into 6 equal servings and enjoy your warm, cheesy, and healthy meal!

Creative Variations to Customize Your Casserole
While this Chicken Spinach Artichoke Casserole is perfect as is, it’s also incredibly versatile! Don’t hesitate to experiment with different ingredients to suit your taste preferences or what you have on hand. Here are some ideas to inspire your culinary creativity and tailor this healthy casserole to your liking:
- Go Veggie-Free (or Add More Veggies!): If spinach and artichokes aren’t your favorites, you can certainly omit them for a simpler chicken and cheese casserole. Alternatively, boost the vegetable content by adding finely diced bell peppers, mushrooms, zucchini, or even a handful of frozen peas or corn (thawed) for extra color and nutrients. Just be sure to sauté watery vegetables like mushrooms or zucchini first to remove excess moisture.
- Protein Swaps: Instead of chicken, consider using cooked shredded turkey, lean ground turkey or beef, or even cooked shrimp for a seafood twist. For a delicious vegetarian version, plant-based protein crumbles or sautéed chickpeas could also work wonderfully.
- Cheese Exploration: Feel free to swap out or add different cheeses. A sharp cheddar, provolone, or a smoky gouda could bring new dimensions of flavor. For an extra creamy kick, a little bit of Gruyère or Fontina would be delightful. You could also mix in some goat cheese for a tangy note or a sprinkle of feta.
- Spice it Up: If you enjoy a little heat, add a pinch of red pepper flakes to the creamy mixture. A dash of onion powder, garlic powder (in addition to fresh garlic), or dried herbs like oregano and basil can also enhance the overall flavor profile. A squeeze of lemon juice can brighten up the flavors.
- Different Dough: While biscuits are key for the “bubble up” effect, you could experiment with crescent roll dough cut into pieces for a flakier texture, or even small pieces of pre-made pizza dough for a chewier bite. The biscuit dough is fundamental to the casserole’s structure, so choose a suitable alternative.
Expert Tips and Tricks for a Perfect Casserole Every Time
Achieving casserole perfection is easy with a few insider tips and tricks. These suggestions will help you streamline the cooking process, enhance the flavor, and ensure fantastic results from your Chicken Spinach Artichoke Casserole, making it a truly easy and delicious meal.
- Effortless Shredded Chicken: To save time and effort, prepare your shredded chicken in advance. A simple method is to add boneless, skinless chicken breasts to your crockpot, covering them with a few cups of chicken broth. Cook on high for 3-4 hours, and the chicken will shred beautifully with a fork. This method yields tender, moist chicken perfect for this casserole and other meals throughout the week. Alternatively, a pre-cooked rotisserie chicken from the grocery store is a fantastic shortcut – simply shred and add!
- Biscuit Brand Matters: For those in the U.S., I highly recommend the Great Value biscuits, typically found at Walmart, for their consistent size and texture. For my Canadian friends, the Pillsbury 340g country biscuits are an excellent substitute. You’ll need about 6.5 biscuits from that pack to get roughly 7.5oz of dough. To prepare them, carefully cut each biscuit in half horizontally to make two thinner pieces, then cut each of those pieces into 6 smaller segments. This ensures you have enough biscuit pieces of the right size for the “bubble up” effect.
- Preventing Dough Clumps: The trick to an evenly distributed “bubble up” texture is adding the biscuit dough in two separate batches. This technique is vital in preventing the dough pieces from sticking together and forming one large, dense ball. By folding them in gently in two stages, you ensure each piece gets coated and has room to expand and bake through evenly, creating a perfect texture throughout your chicken and spinach casserole.
- Ideal Storage for Leftovers: Should you be lucky enough to have any leftovers of this delicious casserole, store them in an airtight container in the refrigerator. It will keep well for 3-4 days, making it an excellent option for grab-and-go lunches or quick dinners. Reheat portions in the microwave or a conventional oven until warmed through.
- Freezing for Future Meals: This casserole is also freezer-friendly! After it’s fully baked and cooled, you can portion it into freezer-safe containers or wrap the entire casserole dish tightly with foil and then plastic wrap. Freeze for up to 3 months. When you’re ready to enjoy, simply reheat from frozen (covered) in a 350°F (175°C) oven for about 20-30 minutes, or until heated through and bubbly. This is a perfect solution for busy evenings when you need a quick and easy dinner option with minimal fuss, extending its life as a convenient meal prep casserole.
- Serving Suggestions: This hearty casserole is a meal in itself, but it pairs wonderfully with a simple green salad dressed with a light vinaigrette, or some steamed green beans for added freshness and fiber. A slice of whole-wheat bread or a light soup on the side can also complement the dish beautifully for a complete meal.
- Fresh vs. Frozen Spinach: While fresh spinach is recommended for its texture, you can use frozen chopped spinach as a convenient alternative. Just be sure to thaw it completely and squeeze out as much excess water as possible before adding it to the mixture; otherwise, the extra moisture can make your casserole watery.
- Soften Cream Cheese Properly: For a smooth, lump-free sauce, ensure your light cream cheese is fully softened to room temperature before mixing. You can do this by leaving it on the counter for about 30-60 minutes, or gently heating it in the microwave for 10-15 seconds. A smooth base ensures a consistently creamy texture for your healthy spinach artichoke casserole.
