  • 3 cups pasta *measured dry, I used rotini for its texture and ability to hold dressing. (SP reference for dry pasta: 27SP)
  • 2.5 cups chopped spinach *I used fresh
  • 6 oz jar artichoke, drained and chopped
  • 1/2 cup non fat plain greek yogurt
  • 1/2 cup fat free sour cream
  • 1/4 cup light mayonnaise
  • 2 garlic cloves, diced
  • 1/3 cup chopped red onion
  • 1/3 cup grated parmesan cheese
  • Dash of salt & pepper

Instructions 

  • Cook pasta according to package directions until al dente. Drain thoroughly, then immediately rinse under cold water to cool completely and prevent sticking. This ensures the pasta remains firm and perfect for the salad.
  • In a large bowl, combine the cooled pasta with all remaining ingredients: chopped spinach, drained and chopped artichoke, non-fat plain Greek yogurt, fat-free sour cream, light mayonnaise, diced garlic, chopped red onion, grated Parmesan cheese, and a dash of salt & pepper. Mix everything together thoroughly until the pasta is evenly coated with the creamy dressing and all ingredients are well distributed.
  • Cover the bowl and refrigerate for at least 1 hour before serving to allow the flavors to meld. This recipe makes 16 generous 1/2 cup servings, perfect for a crowd or for meal prepping throughout the week.
